LOVE OF FOOD SHINES THROUGH

Consistency of product has ensured Glass Dining and Lounge Bar’s strong performance in the past year, says co-owner Shanan Harmelin.

“We have had the same head chef for years which has enabled us to maintain a high level of consistency in our food,” says Hamelin.

“We have a fantastic location, a beautiful restaurant, a loyal group of customers, and chefs who never compromise on our food and service.”

The Main Beach establishment, co-owned by Harmelin and Patrik Gennari, grew revenue by about 20 per cent to $3.8 million despite the tough business environment in the hospitality industry.

Rising labour and electricity costs and the carbon tax are all adding up. But it is a case of soldiering on, she says determinedly.

“It is really hard for us, hard to earn a dollar. The price of everything is going up, but we will push through it and keep opening our doors,” she says.

The restaurant benefits from proximity to two of the Gold Coast’s top hotels, Palazzo Versace and Sheraton Mirage and the restaurant maintains a close relationship with those establishments.

“Trade does go up and down with the weather and the seasons on the Gold Coast, but being adjacent to such great hotels is fantastic,” says Harmelin, 38.

Glass has a strong local following and Harmelin says even in tough times, people budget something for entertainment.

“Even someone flying by the seat of their pants is still keeping the money to have a nice night out,” she says.

Harmelin, who has been in the hospitality industry for 20 years, started as a chef, but disliked the kitchen so moved to the front of house. When asked what drew her to the restaurant game she says: “I love food!”
